MELBA RESERVE CABERNET SAUVIGNON 2014
Deeply coloured with garnet edge. Aromas of blackberry, cedar and cassis. Full and pure mouth coating Cabernet, sweet dark fruits, integrated savoury tannin, textural.
Relatively warm and long growing season producing very fine tannins at moderate alcohols
Fruit was hand picked from vineyards planted in 1987, 1971 and 1991. The fruit undergoes fermentation in open top and static fermenters. Once fermenting, the wine is kept at a minimum of 25°C and left on skins for up to 18 days. The grapes are then pressed, settled overnight and gravity filled to new and used casks where it matures at 16°C for 15 months
5 to 15 years in good cellaring conditions
From the A2, B3 and D2 estate blocks, 28 days maceration, matured for 12 months in French oak (35% new), four aerative rackings. Where the Estate is peaceful, this is incisivie and bright, cassis to the fore, riding high on a bedrock of ripe, clear tannins (and French oak), and driving through to the finish and aftertaste without a moment's hesitation. Rating: 96 points
