WINEMAKING
Expertly chosen grapes, carefully hand-harvested at peak phenolic ripeness. Fermented at controlled temperatures with extended skin maceration lasting 20-30 days and a submerged cap process. Malolactic fermentation takes place in both steel and concrete, followed by a 24-30 month aging period in large Slavonian and French oak barrels, all without using new wood. The wine then undergoes an extensive bottle aging process.
