Pan fried flathead fillets with lemon and fries.
WINEMAKING
Fruit was sourced from a selection of premium vineyards in the Yarra Valley and King Valley. Fruit is gently pressed and allowed to settle overnight. Turbid juice is then racked to both French oak casks and stainless tanks. Lees are stirred in late autumn and then left to rest until the finishing stages before blending and bottling. 2021 was a mild growing season producing Chardonnay with ripeness and texture.
