WINEMAKING

A history of consistently performing Semillon vineyards for Noble One were again used for the 2011 vintage. Each vineyard reached the ideal sweetness levels with the desired amount of botrytis to produce this wonderful wine. Each of the specially selected vineyards were harvested, fermented and matured separately, with each vineyard providing its own unique character adding to the richness and complexity of this wine. Matured in 37% new French oak barriques, 62% one and two year old barriques and 25% unoaked to retain youthful fruit flavours in the blend. 

CELLARING

This harmonious wine has great ageing potential of over 15-20 years.
