WINEMAKING
The Wine Gavi is both the name of the town and the wine produced in the restricted area around the regional centre of Alessandria, Piedmont, close to the Ligurian border. Wine made from vines growing within the actual municipal borders of Gavi can be labelled Gavi di Gavi. Cortese is the local variety of grape from which it is exclusively made. The fruit for this wine comes from a vineyard in the hills of Tassarolo in Alessandria and is picked in September. The grapes are softly pressed in a pneumatic Willmes press. A small portion of the grapes are cold macerated for 48 hours prior to pressing. Fermentation takes place in temperature-controlled stainless steel tanks and lasts around three weeks. There is no oak used nor is there any present in the winery. There is no malolactic fermentation. The wine has some lees stirring during maturation. Once settled the wine is bottled and released after an additional period of rest in the bottle.
FOOD RECOMMENDATION
The medium body of this white wine lends to it pairing well with seafood and poultry.
